Dreams 2024

38 consistent quality for years. A passion for produce and a love of refinement are not only appreciated by the award-winning chef‘s guests: the cuisine at »Schloss Seefels« has been awarded 95 points and four forks by Falstaff, three toques by Gault Millau and three Slow Food Carinthia snails. »Unlike many other toque-awarded restaurants, we offer a la carte dishes and not just menus,« explains Richard Hessl. This is what sets us apart and has already given us a unique selling point. Of course, we also pay a lot of attention to our basic produce, which is of a high quality.« The focus is always on regionality, as the chef sources 80 percent of his food directly from the region, from within a radius of 70 kilometres and from long-standing partners. The motto: the shorter the journey, the fresher the products. Trout and char farmed in the purest stream and spring water come from the Poganitsch fish farm in Grafenstein. The Darmann family from St. Margarethen in Lavanttal supplies the tender, nutty meat of the Wagyu cattle, while the Techelsberg hunting team is responsible for deer and game. »We also prefer to source our fruit and vegetables from the region,« reports the head chef. Harald Lakonig from Treffen, for example, supplies flowers and herbs from his herb garden. In South Carinthia, a culinary network has formed in which larger suppliers also support smaller suppliers, as Richard Hessl reports: »We have many small vegetable suppliers − but a central contact who has dreams / SCHLOSS SEEFELS KULINARIK – SCHLOSS SEEFELS CULINARY Frühstücks-Himmel. Wir danken für die langjährige Schwester- und Brüderschaft In Sachen Feines, Exzellentes und Bestes. a large vegetable trade and takes care of all the invoicing. The short delivery routes also ensure that the produce is particularly fresh, which is also very important to us.« The chef is particularly pleased with the close relationship he has built up over the years with regional producers and suppliers, who also like to come to the gourmet restaurant themselves when they want a treat. »After 18 years of working here,« says Richard Hessl, »more and more locals are coming to enjoy a meal with us.« SEA FISH FROM PORTOROŽ At »Schloss Seefels« we only buy produce from abroad that is not available in Austria, primarily sea fish. Richard Hessl attaches great importance to the fact that these fish do not come from »the other side of the ocean«, but from the Mediterranean. »We buy a lot of things, such as branzino, in Portorož, Slovenia, because freshness and quality are the most important things here too,« emphasises the award-winning chef. The only question that remains is where the chef‘s almost inexhaustible culinary inspiration comes from. Richard Hessl says he gets it from travelling through other countries and exploring their cuisine, as well as from studying numerous cookbooks. »Of course, I also get them from my employees, who contribute their ideas. We don‘t have a one-man show here in the kitchen − it‘s all teamwork with a lot of heart and passion.« > < Edle Tropfen.
